Esterhazy Steak

Ingredients

  • 900g steak, sliced
  • 2/5 c dripping
  • 3 carrots, coarsely chopped
  • 2 onions, coarsely chopped
  • 2 stalks celery, coarsely chopped
  • ½ green pepper. coarsely chopped
  • seasoning
  • 2 t capers
  • 2 t paprika
  • 3 T flour
  • 1 ¼ c stock
  • 3 T sour cream
  • 3 T Madeira wine

Instructions

Sauté vegetables.

Sprinkle with flour and add stock. Add cream.

Fry steak and place in a casserole dish with the vegetables and sauce.

Bake at 350°F for 35 - 40 minutes.

Add wine 5 minutes before serving.
