Boboti

Ingredients

  • • 2-3 T oil
  • • 2 onions, thinly sliced
  • • 1 kg ground beef
  • • 2-3 slices white bread
  • • 1 c milk
  • • ¼ c vinegar or lemon juice
  • • ½ c raisins
  • • 2 T sugar
  • • 2 T curry powder (3-4 T)
  • • 1 t turmeric
  • • 2 T apricot jam, optional
  • • Salt and pepper to season
  • • 5 bay leaves
  • • 2 eggs, beaten

Instructions

Sauté onions in oil. Remove and set aside. Fry ground beef in small batches, till crumbly and cooked through. Add to onions. Soak bread in milk. Squeeze the bread out and add it to the meat. Add vinegar to salt and pepper and combine well. Place mixture into a casserole dish and smooth it out. Poke the bay leaves into the meat in a pattern or randomly. Bake for 30 minutes. In the meantime, mix the eggs and remaining milk together. Pour over the meat and bake for a further 15 - 20 minutes, till the egg has set and is lightly browned. Serve hot with yellow rice. (Add I t turmeric to rice when cooking. Add ½ c raisins about 5 minutes before the end of cooking time.) Serve with chutney.
