Toasted Health Muffins

Ingredients

  • 1 c coconut
  • ½ c oats
  • 1/3 c sesame seeds
  • 1/3 c sunflower seeds
  • 2/5 c butter, melted
  • 3 t honey
  • 2 eggs
  • <1 c milk
  • 1 ¼ c self-rising flour
  • 1/3 c whole-wheat flour
  • ½ c brown sugar
  • 2/5 c raisins

Instructions

Toast first four ingredients in a pan till lightly browned. Mix butter, honey, eggs and milk. Combine dry ingredients and add toasted ingredients, brown sugar and raisins. Combine all together and spoon into muffin trays. Bake at 180 for 20 - 25 minutes. Makes 12. Variation: Add grated orange rind to dry ingredients.
