Bran Muffins

A handy batter that keeps in the fridge - instant muffin mix!

Ingredients

  • 2 c brown sugar
  • 4 eggs
  • 1/2 c oil4 c flour
  • 4 c bran
  • 5 t bicarb
  • 1 t salt
  • 1 1/2 t vanilla
  • 4 c milk
  • 2 c fruit - banana, apple, raisins etc.

Instructions

Combine sugar, eggs and oil.

Add remaining ingredients, mix well and refrigerate.

Spoon into muffin tins, no more than 3/4 full.

Bake at 360°F for 10-15 minutes.

Batter will keep in the fridge for 3-4 weeks.
