Cranberry Orange Muffins

Ingredients

  • 3 c flour
  • 1 ½ c sugar
  • 2 ½ t baking powder
  • 1 ½ t nutmeg
  • 1 ½ t cinnamon
  • ¾ t bicarbonate of soda
  • ¾ t ginger (optional)
  • ¾ t salt
  • 3 t grated orange peel
  • ¾ c butter
  • 1 1/8 c orange juice
  • 3 eggs
  • 1 ½ t vanilla
  • 1 ½ c fresh cranberries (or dried fruit/cherries)
  • 1 ½ c chopped nuts

Instructions

Combine all ingredients to orange peel.

Cut in butter.

Add orange juice, eggs and vanilla.

Stir till moist.

Stir in cranberries and nuts.

Bake at 350°F for 18 - 20 minutes.

Makes 24 muffins.
