Cranberry Orange Muffins

Ingredients

  • 3 c flour
  • 1 ½ c sugar
  • 2 ½ t baking powder
  • 1 ½ t nutmeg
  • 1 ½ t cinnamon
  • ¾ t bicarbonate of soda
  • ¾ t ginger (optional)
  • ¾ t salt
  • 3 t grated orange peel
  • ¾ c butter
  • 1 1/8 c orange juice
  • 3 eggs
  • 1 ½ t vanilla
  • 1 ½ c cranberries (or dried fruit/cherries)
  • 1 ½ c chopped nuts

Instructions

Combine all ingredients to orange peel. Cut in butter. Add orange juice, eggs and vanilla. Stir till moist. Stir in cranberries and nuts. Bake at 180 for 18 - 20 minutes. Makes 24 muffins.
