Pound Cake Muffins

Ingredients

  • 1 c butter
  • 1 ½ c sugar
  • 4 eggs
  • ½ t bicarbonate of soda of soda
  • 5/6 c milk
  • 3 c flour
  • pinch of salt
  • 1 t vanilla
  • 1 t finely grated lemon rind

Instructions

Cream butter and sugar till fluffy - this is the secret.

Beat in eggs one at a time.

Dissolve bicarbonate of soda in milk and add alternately with sifted dry ingredients.

Mix well. Stir in vanilla and lemon.

Spoon into muffin trays.

Bake at 350°F for 25 - 30 minutes. Makes 24 muffins.

*For a cake, bake at 350°F for an hour and 20 minutes.
