Thai Mango Sticky Rice

Ingredients

  • 1 c sweet/sticky rice
  • Ripe Mangoes

Sauce 1:

  • 1 1/2 c coconut milk
  • 1/2 c sugar
  • ¾ t salt

Sauce 2:

  • 1 T cornstarch
  • 1/2 c coconut milk
  • 2 T sugar

Instructions

Steam rice in bamboo steamer. Soak rice for 3 -24 hours, and then drain. Place on lined basket. Steam covered over boiling water for about 20 minutes. (If in a hurry, soak an hour, microwave for 2 minutes and then leave to stand again.)

Sauce 1: Boil 1 ½ c coconut milk, sugar and salt. Stir this into the cooked rice and allow to cool. If there is leftover of this, add to Sauce 2.

Sauce 2: Boil coconut, sugar, ¼ t salt, and corn starch. Pour over cooled cooked rice and mango to serve.
