Cocktail Coconut Cake

Ingredients

  • 1 tin (520g) cocktail fruit with juice
  • 2 eggs
  • 1 ½ c sugar
  • 2 c flour
  • ½ t salt
  • 1 t bicarbonate of soda
  • 4 ½ t baking powder
  • Sauce:
  • ½ t vanilla
  • ¾ c milk
  • 4 T margarine
  • 1 c sugar
  • ¾ c coconut (opt)

Instructions

Mix juice from fruit, sugar and eggs. Add dry ingredients and mix well. Pour into greased tray, a large one! Bake at 180 C for 25 minutes, or till it comes loose from the sides. Prick all over and pour over the sauce. Cook sauce ingredients gently for 5 minutes. Serve hot or cold.
