Salmon Quinoa Tahini Bowl

Ingredients

Quinoa Base

  • 1 T oil
  • 2 c packed chopped kale
  • 3 cloves garlic, minced
  • 1 1/2 c water
  • 2/3 c uncooked quinoa
  • 1/2 t salt
  • 1/2 t sesame
  • 1/4 t black pepper

Tahini Dressing

  • 1/4 c olive oil
  • 2 T soy sauce
  • 2-3 T tahini
  • 1 T lemon juice
  • 1 T red wine vinegar
  • 1 t minced garlic
  • 1/4 t black pepper

Basic Elements

  • Salmon
  • Avocado
  • Pickled red onion, sliced
  • Snap peas, lightly cooked
  • Kalamata Olives
  • Grated carrots

Instructions

Quinoa Base

Heat oil in saucepan, add kale and garlic and cook about 2 minutes.

Stir in remaining ingredients, reduce heat and cook until water is absorbed. (I added a little extra water and drained it at the end.)

This can be made ahead and reheated when needed.

Tahini Dressing

Blend all ingredients in a blender or whisk together in a small bowl.

Dressing can be made a head of time.

Basic Elements

Prepare remaining elements as desired.

Each person can create their own individualized bowl.
