Roasted Vegetable and Chicken Grain Bowl

Ingredients

Grain Base

  • Use buckwheat, Spelt or other grain

Roasted Vegetables

  • 1 medium-large Sweet Potato, halved and sliced
  • 1 bulb Fennel, chuncked
  • 10 Brussel Sprouts, sliced
  • 10 small mushrooms,

Orange Dressing

  • 1/4 c orange juice
  • 2 t red wine vinegar
  • 2 T olive oil
  • 1/2-1 t curry powder
  • 1/4 t salt
  • 1/4 t black pepper

Basic Elements

  • Rotisserie chicken
  • Avocado
  • Pickled red onion, sliced
  • Pumpkin seeds

Instructions

Grain Base

Cook chosen grain, keep warm.

Roasted Vegetables

Toss sweet potato and fennel in oil and season with salt and pepper. Bake at 400°F for 20 minutes.

Prepare the Brussel sprouts and mushrooms in the same way, and add to oven after 10 minutes.

Orange Dressing

Whisk all ingredients together until smooth.
