Joy's Buttermilk Rusks

Nikki's staple rusk recipe through the years. They are not Ouma standard, but they are great!

Ingredients

  • 12,5 cups self-rising flour
  • 2 ½ c bran, all bran, muesli (optional)
  • 6 eggs
  • 1 c white sugar
  • 5 t baking powder
  • pinch salt
  • 3 1/2 c buttermilk
  • 1 c butter
  • 2-3 T of anise seed (optional)

Instructions

Melt butter and sugar, then remove from heat.

Combine dry ingredients in a large bowl.

Add eggs beaten with buttermilk and melted butter and sugar and mix well.

Divide between three greased 9" by 13" pans and bake at 350° F for 45 minutes to an hour.

Turn sheets onto cutting board. Slice into rusk sized portions and place slightly separated on baking sheets - I use four pans for this.

Place in oven at lowest oven temperature for about 12 hours, or till dry.

Store airtight.
