Huevos Rancheros

Ingredients

  • • 3 T oil
  • • 1 green pepper, slices
  • • 2 cloves garlic
  • • 1 chopped onion
  • • 2 c tomatoes, chopped
  • • ½ c tomato sauce
  • • ½ t salt
  • • 1 - 2 T chili powder
  • • ½ t cumin
  • • ½ t oregano
  • • 6 - 8 eggs
  • • grated cheese

Instructions

Sauté oil through onion. Add remaining ingredients, except egg and cheese. Simmer 20 minutes. Break eggs into holes in the mixture, sprinkle with grated cheese. Cook till eggs are cooked to taste. Serve on rice or toast.
