Ingredients

  • • 2 kg beef, coarsely chopped
  • • 2 kg pork, coarsely chopped
  • • ½ kg pork lard, coarsely chopped
  • • 2 T salt
  • • 1 t pepper
  • • <¼ c coriander
  • • 2 ml nutmeg
  • • 1 ml ground cloves
  • • 2 ml thyme
  • • 2 ml allspice
  • • ½ c vinegar
  • • 1 clove garlic, crushed
  • • ¼ c Worchester sauce

Instructions

Mix all spices. Combine all ingredients and grind together, somewhat coarsely. Fill sausage skins.
