Cut pork into pieces. Blend onion, garlic, soy sauce, lemon zest, and spices. Add two slices pineapple and blend well. Pour over the pork and toss to coat well. Thread pork onto skewers alternatively with pineapple. Cook over a fire. Make the satay sauce by heating coconut and peanut butter in a small pot. Stir in remaining ingredients. Serve warm.
