Corn Bread

Bake as bread or as muffins, to serve with Chili.

Ingredients

  • β€’ 1 c flour
  • β€’ 1 c corn meal
  • β€’ 2 T sugar
  • β€’ 4 t baking powder
  • β€’ 1 t salt
  • β€’ 2 eggs
  • β€’ 1 c milk
  • β€’ ΒΌ c oil

Instructions

Mix all ingredients together until smooth. Pour into greased loaf tin and bake 20 - 25 minutes at 230Β° F. For muffins, bake 15 - 20 minutes. For pancakes, fry spoonfuls as you would pancakes. Two batches make a 9 x 13 tray. Goes well with Chili or soup, or needs lots of butter or gravy!
