Ingredients

  • I tin coconut milk
  • 2 T curry paste
  • ½ t salt
  • 1 t sugar
  • 500 g shrimp
  • 1 t chopped lemongrass
  • 1 chicken breast, chopped
  • 1 onion, chopped
  • 1 red pepper, chopped
  • 1 green pepper, chopped
  • 1 c cherry tomatoes (optional)
  • ½ c whole cashews
  • ½ - 1 c pineapple pieces

Instructions

Gently fry chicken pieces, and then set aside.

Fry onion till transparent and set aside.

Warm coconut milk in pot. Add curry paste, salt, sugar, lemongrass, chicken, onion and boil gently.

Add remaining ingredients and allow to heat through.

Serve with white rice.
