Potato Soup

Ingredients

  • 1 ½ c onions
  • 1 clove garlic
  • 4 T margarine
  • 4 c diced potatoes
  • 1 c courgettes (optional)
  • 4 c chicken stock
  • 1 t salt
  • 1/8 t pepper
  • 1 bay leaf
  • 1 stalk celery
  • 1 c milk (optional)

Instructions

Sauté onions and garlic in margarine.

Add all but milk and simmer for 30 minutes.

Discard bay leaf and celery.

Liquidize.

Add milk and reheat, but do not boil.
