Louisiana Sausage Soup

Ingredients

  • ¼ c flour
  • 1 T olive oil
  • 1 chopped onion
  • 1 chopped green pepper
  • 1 stalk celery, chopped
  • 4 cloves garlic
  • 4 c chicken stock
  • 410g can whole tomatoes
  • 4 sliced baby marrows
  • 1ml thyme
  • ½ t black pepper
  • 1ml oregano
  • 1 bay leaf
  • ½ c barley rice
  • 125g chicken, cubed
  • 100g smoked sausage
  • salt to taste

Instructions

Cook flour in fry pan till pale brown. Set aside. Heat oil and sauté onion through garlic for 10 minutes. Add flour. Add stock and boil. Add tomato, marrow and seasonings. Simmer for 15 minutes. Ad barley and cook 15 minutes. Add remaining ingredients and cook through. Serve hot with French bread. Serves 4 - 6.
